Dark chocolate is an incurable seducer, striking with its charm from the first smell, to express itself to its fullest when you taste it. Ours is a fine artisanal product, coming directly from Modica, a city in Italy that knows a thing or two about chocolate. The 70% dark ‘Cioccolato di Modica IGP’ chips make this mix special and combine perfectly with the other two components of the group: Roasted Almonds and Roasted Pistachios, iconic among dried fruits, full of benefits and especially rich in vegetable proteins with high biological value. For this mix, rather than the benefits it brings to our bodies (as is the case with all dried fruits), we wanted to focus on its unique taste.
Since we were able to toast the shelled pistachios, not an easy feat since we needed a baking tray oven which we did not have, the first combination we thought of was undoubtedly with ‘Cioccolato di Modica IGP’ flakes from the Choco Mix collection. In fact, it is no secret that chocolate marries perfectly with pistachio. The granularity and intense flavour of the flakes from ‘Cioccolato di Modica IGP’ marry perfectly with the crunchiness of the roasted nuts. The roasting process further enhances the unmistakable flavour of the pistachio. We fell in love with it.

Why did we choose ‘Cioccolato di Modica IGP’ flakes for our mixes?
Chocolates from ‘Cioccolato di Modica IGP’ are only made from cocoa mass, i.e. ground cocoa beans, and contain only the butter that naturally occurs in cocoa beans.
It never contains milk or lactose, which is another fat-bearing ingredient.
Only organic cane sugar is added to the fine cacao.This makes it lower in calories than normal chocolate.
The real secret is cold working:
● It does not melt the sugar inside, leaving the chocolate with a grainy texture.
● It preserves the organoleptic and nutritional properties of cocoa, leaving higher percentages of flavonoids.
Why 70% fondant?
